Holiday Cheer – Soups in a Jar

You should put these ingredients in jars, but I find it just as easy and less expensive to put them in a bag, the plastic ones you can find in a hobby store for party goodie items. The soup mixes are inexpensive and easy to put together and are great for neighbors, teachers, co-workers, church friends. If you want to elaborate on the gift, put a jar/bag in a basket with the canned ingredients and add soup bowls, a soup ladle, and cornbread mix.

Bean soup in a jar

The following recipe is really good!  I make it a couple of times during the year for my family.  Great for those cold winter nights.

Country Six-Bean Soup Mix

Ingredients for jar:

½ cup dried red beans
½ cup dried navy beans
½ cup dried pinto beans
½ cup dried baby lima beans
½ cup dried kidney beans
½ cup dried Great Northern beans
2 bay leaves
2 tbsp dried minced onion
1 tbsp dried parsley flakes
2 tsp beef bouillon granules
1 tsp dried minced garlic
1 tsp dried thyme leaves
½ tsp dried oregano leaves
½ tsp black pepper
¼ tsp red pepper flakes

Directions for putting jar together:

Layer beans in a 1-quart food storage jar with tight-fitting lid. Slide bay leaves down the side of the jar. Place spices in a small baggie. Close tightly with a twist tie. Place bag on top of beans in jar and close jar tightly.

Cover the top of the jar with a decorative piece of fabric and attach recipe card with ribbon.

Recipe Card to include with jar:

1 jar Country-Six Bean Soup Mix
4 or 5 cups water
1 can (28-oz) diced tomatoes with Italian seasonings
8 oz smoked sausage links or 2 smoked ham hocks
Hot pepper sauce or red wine vinegar (optional)

1) Remove seasoning packet and bay leaves, set aside.
2) Place beans in large bowl or pot; cover with water and let soak 6-8 hours or over night. Drain beans, discard water.
3) Combine soaked beans, 4-5 cups water, tomatoes, sausage, contents of seasoning packet and bay leaves in a Dutch oven. Bring to a boil. Cover, reduce heat and simmer 1 ½ to 2 hours, until beans are tender. Season to taste with hot pepper sauce if desired.

Makes 8 to 10 servings.

Country 6-Bean Soup


Home-Style Chicken & Rice Soup Mix 


½ cup dried yellow split peas or wild rice

2 tablespoons dried minced onion

2 tablespoons dried vegetable flakes or parsley

2 teaspoons chicken bouillon granules

1 teaspoon dried thyme leaves

½ teaspoon dried minced garlic

½ teaspoon dried marjoram

½ teaspoon lemon pepper

1 cup uncooked brown rice

1 bay leaf


Layer split peas/wild rice, onion, vegetable flakes, bouillon granules, thyme, garlic, marjoram, lemon pepper and rice in a 1-pint food storage jar with a tight-fitting lid.  Slide bay leaf down side of the jar. Close jar.

Recipe card to include with soup mix:


1 jar home-style Chicken & Rice Soup Mix            1 8oz can tomato sauce

6 to 7 cups water                                                            2 cups cubed cooked chicken

Salt and pepper

  1. Combine contents of jar, water, and tomato sauce in a Dutch oven. Bring to a boil. Cover; reduce heat and simmer one hour.
  2. Stir in chicken. Cook over low heat 10 to 15 more minutes or until chicken is heated through. Remove and discard bay leaf. Season to taste.
  3. Serves 10 to 12.


Taco Bean Chili Mix 


½ cup dried kidney beans

½ cup dried pinto beans

½ cup dried red beans

1 pkg taco seasoning mix

1 tablespoon dried minced onion

½ teaspoon chili powder or chipotle chili seasoning

½ teaspoon ground cumin

1 ½ cups tortilla chips


Layer kidney beans, pinto beans and red beans in 1-quart jar with tight-fitting lid. Place taco seasoning mix, onion, chili powder and cumin in a small storage bag and seal. Place in jar, spreading out to cover beans.  Add tortilla chips. Close jar.

Recipe to include with jar:


1 jar Taco Bean Chili Mix                                1 pound ground beef or turkey, browned and drained

4 cups water                                                      Shredded cheese, copped lettuce and black olives

1 can 14½oz can diced tomatoes               1 8oz can tomato sauce

with green chilies, undrained

  1. Remove chips and seasoning package from jar, set aside. Place beans in a large bowl; cover with water. Let soak 6 to 8 hours or overnight. (To quick soak beans, place beans in large saucepan; cover with water. Bring to boil over high heat. Boil 2 minutes. Remove from heat; let soak, covered, for 1 hour.). Drain beans; discard water.
  1. Place soaked beans, water, tomatoes, tomato sauce, ground beef and contents of seasoning packet in Dutch oven. Bring to a boil over high heat. Cover, reduce heat and simmer 1½ to 2 hours or until beans are tender.  Crush tortilla chips. Stir into chili and cook 5 to 10 minutes to thicken. Serve with cheese, lettuce and black olives.
  1. Serves 6 to 8
